One Dish Korma Curry......

Thanks to Jules Sebastian for this recipe which I have adapted.......
only uses on dish so that is wonderful and cooks in the oven.........
I have a big deep baking dish 35x28cm (14x11inchs)
Ingredients
500g Basmatic rice (rinsed)
1 red onion sliced
2 cloves garlic crushed
1 tin coconut milk
jar korma paste (Jules used 4 tabsp)
1kg chicken thighs
2tsp keens curry powder
2tsp cumin ground
250ml chicken stock 
(Jules also used 2 tsp caster sugar but I forgot that both times)

add washed rice (uncooked), onion, garlic and korma curry paste to the dish and mix well


place chicken thighs into the mix
sprinkle with curry powder and cumin (and sugar if you remember it)
pour chicken stock around the dish.....(did this after the photo)
place in oven 180C
Place in the oven covered with foil for 45 mins then uncovered for about 10mins. 
serve with some natural yoghurt, naan bread etc........
Freezes well so I dish up the leftovers into containers and freeze ready for another day.........
